Description
The “Sultano” smooth chickpea is a cultivar of the “cicer arietinum”, an annual herbaceous plant of the legume family originating in the Middle East which has been cultivated since ancient times throughout the Mediterranean basin.
The plant has small smooth seeds of spherical shape and straw yellow colour with remarkable organoleptic qualities due to the variety, the cultivation method and above all the soils in which they are produced. The “Sultano” chickpea variety clearly stand out from the others commonly found on the market, because it remains intact when cooked and has a thin hull that makes it the most digestible of the legumes. Our chickpeas are an excellent source of protein, are highly digestible, rich in starch, vitamins A and C and also contains good amounts of fibre, calcium and iron.
The “Sultano” smooth chickpea is a cultivar of the “cicer arietinum”, an annual herbaceous plant of the legume family originating in the Middle East which has been cultivated since ancient times throughout the Mediterranean basin. The “Principe di Gerace” chickpeas come exclusively from our farms located in the Abruzzo region (Italy), dedicated to the cultivation of this legume since medieval times.
Naturally gluten-free, their excellent flavour makes them the ideal ingredients for the creation of various recipes: from traditional soups to the classic Pasta e Ceci (pasta with chickpeas), to pureed soups and flans. Boiled, they can be enjoyed alone simply seasoned with extra virgin olive oil. They are a staple in the Middle Eastern cuisine for the preparation of dishes such as falafel and hummus.
The addition of Mediterranean flavours such as rosemary, garlic and bay leaves gives each preparation a delicate and unmistakable aroma and taste.
