  • The smooth “Sultano” chickpea is a cultivar of Cicer arietinum, an annual herbaceous plant of the legume family, originally from the Middle East and cultivated since ancient times throughout the Mediterranean basin.

    It features small, smooth, spherical seeds of straw-yellow color with remarkable organoleptic qualities, thanks to the variety, the biodynamic cultivation method, and above all the soil in which they are grown. It stands out clearly from other chickpeas commonly found on the market. Important for their supply of high-quality proteins, they are also very rich in starch, vitamins A and C, and contain good amounts of fiber, calcium, and iron.

    The Sultano cultivar has the peculiarity of cooking quickly and has a thin skin, making it the most digestible among legumes. “Principe di Gerace” chickpeas come exclusively from the lands of our farm in Abruzzo, dedicated to the cultivation of this legume since medieval times.

    Naturally gluten free, their excellent flavor makes them an ideal ingredient in the kitchen for the creation of various recipes: from typical soups and stews to veloutés and flans, served cold in salads or as a side dish to accompany fish. Once boiled, they can be enjoyed simply seasoned with extra virgin olive oil. Finally, they can be protagonists in oriental cuisine preparations such as falafel and hummus.

    The addition of Mediterranean aromas such as rosemary, garlic, and bay leaves gives every preparation a delicate and unmistakable taste and aroma.
